My favourite lunch, dinner & breakfast really… Something I could eat everyday and have been making for years, which I’m bringing to ESK for you guys to try and (hopefully) love!!! It’s a medley of fresh and crunchy vegetables, topped with char-grilled, chipotle chicken thigh, mozzarella & a balsamic vinaigrette. The base consists of oven roasted corn cut straight off the cob, crunchy red capsicum, crisp Lebanese cucumber, finely diced red onion and some pearl cous cous, and my special lunch bowl is ALWAYS topped with a few pieces of bocconcini mozzarella to tie things together! I hope you guys love my favourite lunch dish as much as I do!
